Pasta Making 102: CAVATELLI
In this hands-on class, Chef Peyton will instruct you in the 4 essential techniques needed to make authentic Italian Cavatelli:
- Hydrating and Building the Dough relying entirely on using semolina flour and warm water to implement “the Well Method.
- Developing gluten through proper kneading to give the pasta its signature al dente bite, using the heel palm technique and “the poke test”.
- Sizing and Extruding “The “Rope” Roll” before shaping the individual pieces of cavatelli.
- Creating the signature shape of cavatelli through “the dragging and caving” technique by hand, with a gnocchi board or a cavatelli machine.
You will also be preparing a hot appetizer, San Marzano Tomato Sauce, an Italian Salad & Garlic Bread. Then, the class will move into our lovely Vasto Room to enjoy dessert and a glass of featured red or white wine.

Originally from both Seattle and the Columbus area, Peyton has spent most of his career working in Seattle’s bustling food scene. Now based in Columbus, he brings his passion and experience to Carfagna’s as a Cooking Class Instructor. Peyton specializes in pasta, brunch menus and cooking up perfect steaks and chops!

All Carfagna’s Cooking Classes are hands-on and limited to a maximum of 12 adults. You will work with your friends or other guests in small groups sharing food preparation, equipment, and workspace while creating a 3 or 4 course meal. The class instruction lasts for approximately 2-2 1/2 hours, followed by dinner in our lovely “Vasto Room” or Piazza, as a shared buffet of your culinary creations. Plus, you will also be served a light appetizer, or dessert and glass of featured red or white wine. (Nonalcoholic options are also available). Guests each receive a Recipe Packet and a 10% off coupon for Carfagna’s Market (Not honored in Carfagna’s restaurant, bar, or for any alcohol).
All food prepared in the class must be consumed on the premises. Menu items are subject to change. If you have any food allergies, please note them on your enrollment form when you sign up for the class, since adjustments to the menu cannot be made during the day of the class. Our classes are designed to be educational, interactive, fun, and fill up quickly!
Cancellation Policy
We do not offer refunds for any canceled Cooking Classes. Classes may be canceled by calling 614-323-8609, up to 48 hours in advance of the class. Another class may be rescheduled within 30 days, or for next class availability. Same day cancellations or no shows are not refundable or rescheduled but may be transferred to a friend or family member to attend in your place.
