Carfagna’s NEW pasta making concept is for beginning or experienced home cooks who want to learn, in detail, everything you need to know about the flours, ingredients and techniques to make, roll, and machine & hand cut homemade pastas. This class makes making pasta easy to learn by combining both an instructional/demonstration and hands-on format. This exceptional class is limited to 16 guests and is artfully taught by Chef Sue Fawcett-Berardi, our Resident Pasta Expert, who has 25+ years of pasta making expertise and has studied Pasta Making and Italian Cuisine while touring Italy with a prominent Italian-American Chef.
The class begins with a presentation teaching you about different pasta flours and their applications; how pasta varies throughout regions of Italy; as well as key methods of mixing and properly kneading pasta dough.
As the class proceeds, Chef Sue will guide you through a Hands-on Workshop where you will mix, knead, cut, and/or handshape the proper doughs to make Fettuccine, Farfalle, and Gnocchi Sardi*. You will also learn about pairing these 3 pastas cuts with 3 different sauces, which complement their shapes for perfect traditional pasta dishes!
*(Gnocchi Sardi are shaped like mini potato gnocchi but are made with semolina pasta dough)
Your handmade pasta will then be cooked by our staff and will be served to you buffet style accompanied by Carfagna’s Marinara, Alfredo, & Pesto Sauces, Carfagna’s Famous Meatballs, Italian Chopped Salad, and Italian Rolls with Herb Butter.
Wine and cocktails are available for purchase at our beautiful Bar Saturnino.

All of Carfagna’s Cooking Classes are hands-on and limited to a maximum of 12 adults. You will work with your friends or other guests in small groups sharing food prep, equipment, and workspace while creating a 3 or 4 course meal. The class instruction lasts for approximately 2-2 1/2 hours, followed by dinner in our lovely Vasto Room or Piazza, as a shared buffet of your menu creations. Plus, you will also be served a light appetizer, or dessert and glass of featured red or white wine. (Nonalcoholic options are also available). All food prepared in the class must be consumed on the premises. Menu items are subject to change. If you have any food allergies, please note them on your enrollment form when you sign up for the class. Classes may be canceled up to 24 hours in advance with no refunds, but future classes may be rescheduled within 30 days or for next class availability. Same day cancellations or no shows are not refundable or rescheduled. Guests each receive a Recipe Packet and a 10% off coupon for Carfagna’s Market (Not honored in Carfagna’s restaurant, bar, or for any alcohol).
