In this class you will be making an extraordinary dinner inspired by classic Sicilian favorites.You will start by making Sicily’s famous Arancini, breaded and fried balls of risotto with a stuffed center. Then you will learn the techniques to make easy homemade pasta dough to stuff and cut into ravioli topped by a wonderful artichoke sauce with sun dried tomatoes and fried capers. A unique vintage citrus salad recipe straight from the heart of Sicily will be the perfect accompaniment to this amazing meal. Lastly, you will celebrate your culinary achievements with a glass of our featured red or white wine and dessert in our candlelit Vasto Room.

All of Carfagna’s Cooking Classes are hands-on and limited to a maximum of 12 adults. You will work with your friends or other guests in small groups sharing food prep, equipment, and workspace while creating a 3 or 4 course meal. The class instruction lasts for approximately 2-2 1/2 hours, followed by dinner in our lovely Vasto Room or Piazza, as a shared buffet of your menu creations. Plus, you will also be served a light appetizer, or dessert and glass of featured red or white wine. (Nonalcoholic options are also available). All food prepared in the class must be consumed on the premises. Menu items are subject to change. If you have any food allergies, please note them on your enrollment form when you sign up for the class. Classes may be canceled up to 24 hours in advance with no refunds, but future classes may be rescheduled within 30 days or for next class availability. Same day cancellations or no shows are not refundable or rescheduled. Guests each receive a Recipe Packet and a 10% off coupon for Carfagna’s Market (Not honored in Carfagna’s restaurant, bar, or for any alcohol).
